Ginger Cookies

When in doubt, bring baked goods.

My baker friends taught me this easy and excellent trick for sharing happy (and making new friends). It can be a great icebreaker, too, especially in situations where you are "new" (who doesn't like the person holding a box of cupcakes?!).

So I moved into a new co-working office space recently, and figured now's a good time to do some baking. Molasses spice cookies for my new office mates! I couldn't resist embellishing one, of course. This batch is cut into shapes, but the recipe works just as well if you spoon them out onto the baking sheet. My friend Shannon, a master of bringing baked goods (MBBG?), shared this recipe with me a few years back. Now it's one of my favorites, with all its ginger-molassesy goodness. Maybe you'll like it, too?...

Molasses Spice Cookies

1/3 C - granulated sugar
1/3 C - dark brown sugar
5 oz - butter, softened
1 - large egg yolk
1 t - vanilla extract
1/2 C - molasses (dark or light)
2 1/4 C - Flour
1 t - Baking soda
1 1/2 t - Cinnamon
1 1/2 t - Ginger
1/2 t - Cloves
1/4 t - Allspice
1/4 t - Pepper
1/4 t - Salt

Bake at 375° on the middle rack.

The spooned/balled version of this recipe turns out chewy and yummy. Rolled out/shaped versions end up more like soft ginger snaps. Less chewy, but also yummy.

Optional step for extra pretty and sugary cookies: sprinkle some raw sugar on top before baking
